I was so tired last night. So incredibly tired. The kind of tired where I could have cried & the last thing I wanted to do was cook dinner. But people were hungry, we didn’t have a back-up plan & I had to post this recipe on our blog today. So, I cooked. And I was not mad.

Grilled Ginger-Sesame Chicken Chopped Salad. The marinade was simple to make & required no big dishes to put it all together. I let the chicken marinate for ~1 hour before cooking. And your queen of short cuts over here purchased bags of slaw mix to use rather than having to wash & chop everything up myself.

All it took was a quick toss of the chicken, salad mix & dressing. And dinner is served!

But there was way too much dressing, or maybe the dressing was too salty, it’s also possible I didn’t have enough slaw mix… our quick solution was to heat up some instant jasmine rice to soak up some of the flavor & voila! And now dinner is served!

We always have instant rice on hand for times like this or to stretch a meal a little further, it’s a pantry staple over here!
