The first big cold front of the season is blowing through over the next few days. In celebration (if you can’t tell, I love cozy cold weather), we’re setting the scene with a warm bowl of Chicken Cacciatore. Perfectly described as a “rustic Italian comfort food” our household loves.
Using the Instant Pot to prepare the meal makes it easy to prepare & clean up. And we’re not spending so much time at the stove. (We love saving time!)
Tonight we decided to serve our Chicken Cacciatore over mashed cauliflower.
If you’re not familiar with mashed cauliflower, here’s how we make ours. Steam a bag of frozen cauliflower rice (following the package instructions) and add to a deep bowl with a splash of milk & a spoonful of butter. Blend everything together with an immersion blender then season with salt & pepper to taste. Voila!
