  • 2 tablespoons fresh squeezed lemon juice
  • 2 tablespoons maple syrup
  • 2 1/2 tablespoons canola or vegetable oil
  • 1 tablespoon mirin or rice wine vinegar

  • 2 garlic cloves
  • 2 ears of corn
  • 1/2 avocado

Crispy Rice with Bacon & Broccoli

  • 1 carrot
  • 1 1/2 cups broccoli
  • 1 cup green chopped cabbage
  • 1 1/2 cups scallions
  • 1 1/2 cups mushrooms

  • 6 ounces thick-cut bacon

  • 1/4 cup Italian seasoned panko bread crumbs
  • 1 tablespoon parmesan cheese
  • 2 1/2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast
  • 1 cup Italian sauce
  • 4 ounces part skim mozzarella cheese
  • 4 cups cauliflower florets, fresh or frozen

Chili Lime Steak Fajita Lettuce Wraps

This is one of those meals that you can almost guarantee to make everyone happy with. Swap the lettuce wrap for a tortilla or serve the wrap on a bed of rice. Serve a mixture of black beans & corn as a side. Add queso fresco & sour cream to your options for toppings.
