We’ve made it to the other side of summer and now we’re officially living in the time of pumpkin spice & everything nice! … Kinda. That Texas sun is still keeping us toasty.
Since we’re not quite in the mood for all the soups, curries & casseroles that will keep us warm when the temperatures drop, we decided to keep our first seasonal celebration light & crisp.
We started off with an amazing Apple, Gouda & Farro Salad. (I forgot how much I love apples!) Topped with a simple apple cider vinaigrette, you could see mouths begin to water as everyone plates their dish. The variety of flavor & texture makes this salad top notch!
And who doesn’t love pizza?! In addition to the salad we all got a slice of White Pizza with Butternut Squash & Prosciutto.
There are 3 kinds of cheese on this pizza!! Mozzarella, pecorino & ricotta. (Chef’s kiss!) The flavors in the toppings complimented each other perfectly, a subtle sweetness from the butternut squash & savory prosciutto to bring it to the next level.
