It’s time, pumpkin time. We couldn’t wait any longer and decided to jump right in with a sweet & savory pumpkin ravioli, topped with pumpkin seeds & fresh grated parmesan cheese.

I have a feeling I might know what you’re thinking, and I thought the same thing. No, you do not have to make your own puree for the filling. And no, you don’t even need to make your own dough.

The filling consists of a few pantry items, parmesan cheese & a can of pumpkin puree.

You can make your own dough, if you feel like it, but you can also use wonton wrappers. Scoop about a tablespoon of the filling onto a flat wrapper, wet the edges with water & top with another wrapper. Press down to get all of the air out & seal the edges by crimping with a fork. Remember to boil the wonton ravioli in salted water a little bit longer than the directions call for. (2-3 minutes rather than 90 seconds. It doesn’t seem like a lot but it’ll make a big difference.)

It took us about 35 minutes to make, fill & cook the whole meal. (Clean up took a little bit longer than I would have liked, but I had a helper in the kitchen.) This decadent treat was ready in less time than I could have imagined!
